Start cookin' healthier ; Go Green !

I've been learning alot the past few days at Green Cooking. I've been inspired to cook healthier meals ; well, I've been inspired to simply cook. At our summer exploration class this week, we've learned to make many delicious things, & at no expense of our weight. ;) haha every foodie's dream, right? Well, I've been ditching the fast food scene for awhile [the longest I've done was 9 months, very hard to do nowadays with these 24/7 mcdonalds & shit], and I feel great. My mom still thinks I needa lose a few pounds still. *sigh* Well, anyways, on Monday, we made guacamole & salsa. But me, my friends Tati(ana), Nica, Alondra & Christina made a guacasalsa. Haha. It was muy deliciosa ! Avocado, tomatoes, mangoes, cilantro, salt pepper, organic jalapeno sauce, manjo juice, & lime juice. Yumm ;D We also made fruit salad, corn salad, dates & cheese, & this tortilla dish I really can't remember the name of. It had corn tortilla, the sauce stuff, goat cheese...OH YEAH GOAT CHEESE ENCHILADAS!! hahahah anyways, monterey jack, this other kind of cheese, tomato, & cilantro. Good stuff, maaan =)We made it into a lasagna form, which made it taste even better! When we were cleaning up, Tati, Nica, Alondra & I were using the hose-like sink, where you can drag the hose thing wherever, and we had a water spraying fight. Good times, duude. Umm...just wondering if any of you notice this, but why do I keep saying "maan" & "duude" ? I promise I'll stop. Okay, anyways, on Tuesday, we made breakfast stuff, so me, Tati, Nica, Alondra & Christina and the rest of our class made our own muffins! Woo hoo!! we followed the basic muffin recipe, and added whatever dried fruit we wanted. We also made berry smoothies (ourselves, w/o supervision, LOL) & Ms. Buell (one of the teachers) made mango banana smoothies which were hella awesome, props to Ms. Buell. Tasted like stuff from Jamba Juice. Then we did this research thing on different fast food chains, and all the calories, fat, cholesterol, saturated fat, protein, sodium, etc. on all of them and replaced them with healthier substitues. Me, Tati, and this girl named Gemma did Panda Express. The Crispy Shrimp, ORANGE CHICKEN, Fried Rice, and Mixed Veggies : 1,050 calories. Daayyumm. Sorry people who loovveee Panda Express' Orange Chicken (including me): 584 calories. When we replaced our stuffies, we ended up with : 564 calories ! Duble Daayyumm !! Hahaha. Then we went back to the SLC, and made posters w/ taglines for our new & improved meals, but most of the time, all the frosh girls (soon to be sophomores!) : Carmen, Nica, Tati, Alondra, Christina, & Me were instead marking each other with markers & sparkly poster paint! Woo hoo! & we snuck into the men's restroom (well, some letters were torn off, and now it says, 'men res poo' & we shot some videos of us going in and stuff. hhahaha. dont tell the principal! LOL jkjk. the janitors locked the girls bathroom & we couldnt find any janitors to open the door. Okay on Wednesday, FIELD TRIP! supposedly the most fun day of the week, but it turned out to be the most boring. We got to Greens Restaurant (At Fort Mason Center, Building A). The food looked sooo goood!!!! OMFG ; but we did a tour & all the executive chef did was lecture, which kinda bored me cuz I wanted to eat!!!!! I didnt eat anything except a muffin I made MYSELF that morning. but I was staaarving cuz it was like 12:30. But the executive chef, Annie Somerville, was very nice, and shes a vegetarian too, just like the restaurant. It has a beautiful view of the harbor, and a very spacious, airy place. Very comfy too ;D After that, we took the bus to the UN Plaza's Farmers Market. We were divided into 2 groups : fruits & veggies. Each group was given $30-40 and we had to budget it all. I was in the veggies group. We sampled some strawberries, they're SOOOO DELICIOUS THIS TIME OF YEAR THEY HARVEST IT!! NO JOKE!! & Tati, Nica & I were staring at one of the guys selling mushrooms. HELLUHH FIINNNEE!! <3 haa we kept passing by back and forth from his lil tent just to glance at him. :) we noticed him cuz there were hella creepy guys there. like the guy selling dirty veggies. Yuck ! ;P We made pizza , which was hella good. Okay, since I'm finally coming back to edit this now (6.28.09) and practically forgot all the stuff we did on Thursday and Friday besides compiling our cookbooks, this is where I'll end it. =) When Ms. Buell sends us the cookbooks, I'll make sure to post it here! ;D
